India’s Riverdale Estate is situated in Shevaroys Hills in idyllic coffee producing conditions. Operating since 1920, this is a third generation family run farm who take great care in each phase of producing excellent coffees. Over the last ten years, they have been transforming the farming practices, building a state of the art cupping lab, energy efficient pulping station, raised drying beds, and temperature controlled storage.
Riverdale took 2 years of research in conjunction with the wine industry to get their Carbonic Maceration process to the flavour they desired. Coffee cherries are carefully selected by the head picker based on their measured sugar content to ensure they are properly ripened. Cherries are then placed in an oxygen free tank where they ferment slowly, to enhance complexity & delicacy. Once complete a careful drying phase is performed where cherries are placed on raised beds in full sun for 4-6 days then transferred to part shade for a further 20-25 days.
This coffee is nothing like what you might expect from a coffee. Crazy complexity, yet super clean & delicate, there is so many little flavours you can get from this, we've jst tried to list the most prominent.
