In the state of Chiapas, you find Mexico's largest & oldest coffee producing regions, with some farms having a history of more than 100 years. With the influence of the Atlantic Ocean on one side, and the Pacific Ocean on the other, the mountain slopes of the sierra Madre Chiapas crosses the region dividing the state and creating various special microclimates.
This specific lot is made up of peaberry from the estate. This gives delicious sweetness & roundness to the coffee, with rich, boozy flavours crossing the palate, countered by the sweetness of strawberries, and finished with a slight tannic/sweet nature of tea.
