We've been in love with the Montalvo Association's conventional coffees, and this sugar cane decaf is no exception!
The coffee is washed a few times with an organic solvent (ethyl acetate) made from fermented sugar cane. After treatment, the coffee is steam treated to remove the solvent fully, then cooled rapidly to reduce the moisture content to the typical 10-12% moisture content for export.
The results in the cup are bold to start, but with a lingering stonefruit finish.
